Fresh water Tank on a Bourton

Fresh water Tank on a Bourton
My 2015 Bourton has two Fresh water tanks , one under offside bunk and one externally under floor apparently holding a total of 62 lts.
I understand the newer Bourton's just have the one tank externally, under the floor, leaving the offside bunk area almost clear
Has anyone converted their earlier Bourton from two tanks to one? Any advice on this subject would be appreciated.
